Handmade in small batches using local sprayfree cabbages grown in the Waikato.
GoodBugs Sauerkraut is fermented using traditional wild fermentation methods. The process of lacto-fermentation utilises the naturally present yeasts and bacteria on cabbage to produce a sauerkraut alive with lactic acid bacteria and other beneficial microbes (GoodBugs!).
Our best selling Golden Kraut smells devine when you first open the jar, pairs well with everything but especially fish and chips, with a refreshing feel on the palate.
Zuurkool - the dutch word for sour cabbage - is just white cabbage and salt is nostalgic for many of our European customers, while Dilly Dally is subtle and pairs well with sandwiches and as a condiment with your main meal.
Citrus Twist is Marea's favourite and is perfect with smoked fish on crackers.
Purple Zuurkool (see what we did there;-) is our most medicinal, being 100% purple cabbage which is low FODMAP and high in antioxidants and anti inflammatory properties. Subtly flavoured with caraway seed. Marea enjoys it with deconstructed sushi bowls.
Our Thai This has a tad more heat, and tastes a bit like a green curry, so refreshing.
Do you like Beets? We have two Sauerkrauts with Beet, Our Beeter Be Good - with Apple and a touch of ginger it is a common Dutch combination. Our Fennel Countdown is also one of Marea's favourites with the refreshing taste of fennel which balances the earthy taste of beets.
Lastly, but fast becoming our second most popular is Sweet As, this is our only sauerkraut where we add the flavours after the fermentation, which means the sweetness of the raw local honey is retained. This is a great one for beginners, reluctant partners or kids. Goes amazing with our GoodBangers artisan hotdogs at local markets.
