Lets do breakfast, this is my everyday go to breakfast, the toppings vary ( actually I like mine plain with a twist of pink sea salt on top 😉 ) but overnight soaked oats is it in our house. It's not everyone’s cup of tea I know, but it fills me and mine and takes literally 5 min to make. But this Friday ferment is actually about the apple sauce on top 😆💕 My apples were sweet enough so did not need any sweetener.
Apples - peeled and chopped into chunks
Sweetener if required.
Unpasteurised kombucha, water kefir or whey
Place apples in a pot with a splash of water and cook till soft, add honey or something to sweeten if you need. Wait till cooled a bit before putting in jar leaving quite a bit of head room.
Add about 1cm of water kefir, kombucha or whey and leave on the bench till the liquid has vanished into the sauce (about 1-3 days) now you have fermented apple sauce 👍
Store in the fridge for 1-3 months.
